I bought this primarily for working einkorn sourdough. The medium size, 12×16, is perfect for this. It is just big enough to place across one kitchen sink, which leaves my counter free and clean. In a tiny kitchen like mine, this is great. I used to work my dough directly on my counter–after having to move things out of the way. Using the marble slab is so much neater, and cleans up so much easier than using my counter. The marble does have a slight flaw over a portion of the marbling. You can’t see it, but you can feel the tiny rough patch when you run your hand over the surface. This doesn’t seem to have affected its utility. I love it.
